Superbowl Brownies from John Elway!

I grew up rooting for the Cleveland Browns, watching their games every Sunday with my family.  I will never forget the rivalry they had with the Denver Broncos in the ’80s and absolutely despising John Elway during “The Drive.”  I can laugh about it now and have grown to appreciate John Elway as possibly one of the best quarterbacks in the NFL.  Apparently, John is just as talented in the kitchen as he is on the field!  I do think it is a bit ironic that he has a BROWNIE recipe that was featured in People Magazine and just had to post it for all my desserters/football fans out there!  I like that John adds coffee extract to his brownie mix because adding coffee helps to enrich the chocolate flavor!  They seem pretty easy to make, just 6 simple steps!  Looks like a touchown John!

-makes 12 brownies

1/2 cup all-purpose flour
1/4 tsp. baking powder
1/2 cup butter, cubed
1/3 cup cocoa
1/4 tsp coffee extract
2 eggs
1/4 tsp. salt
1/4 tsp. vanilla extract
1/2 cup sugar
1/2 cup light brown sugar, firmly packed
Vanilla ice cream and chocolate/caramel sauce, optional

1. Preheat oven to 350 degrees
2. Sift together flour and baking powder, set aside
3. Combine butter, cocoa, and coffee extract in heat proof bowl over simmering water, stirring until melter, set aside
4. Beat eggs, salt, vanilla, and sugars on low speed with an electric mixer until thickenend.  Gradually add cocoa mixture.  Gently fold flour mixture into batter.  Spread in a greased, 8 in square  baking dish.
5. Bake for 25-30 minutes or until top is beginning to puff and center is set.  Cool on a wire rack.
6. Cut brownies into 12 squares and top with ice cream and sauces if desired!
