Frankenstorm = Pumpkin bread making time!
What do you do when you can’t leave your apartment due to the hurricane Sandy??? Why, make nine loaves of pumpkin bread of course! One of my favorite things to bake is my mom’s pumpkin bread. It’s a yearly tradition in my family to bake the bread, and it was the perfect treat during the storm. So to all of you who want to make delicious and moist pumpkin bread, here is the recipe!
Ingredients:
1 15/16 oz. Plain Pumpkin
3 cups Sugar
1 cup vegetable oil
2/3 cup water
4 eggs
3 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
Heat oven to 350º. Grease pans with flour and butter (or buy Baker’s Joy). In a large bowl, beat first 5 ingredients. Add the rest and beat on low until moist (about 1 min). Pour batter in to pans. Bake for 45 min. Put the bread in a sealed ziploc bag still warm. This ensure it to be really moist! Enjoy!
