The Cup

While performing in St. Louis at The Muny this summer, I was told I couldn’t pass up a cupcake at The Cup. When I decided to stop by one day after rehearsal, I knew I had to choose the “Muny Medley” cupcake they created for the theatre.  Lime and strawberry sherbet cake topped with orange buttercream.  I know this sounds somewhat “out there,” but OMG it was amazing!  There’s something about the citrus and cake combo that is sweet and refreshing.  Like creamsicle in a cake, the dense treat wasn’t too heavy.  I could easily eat the entire cupcake.  High quality and creative, The Cup has delightful treats that can trump others.  Jon Baker, the general manager of the store, answered some questions I had about this adorable place:
Explain the “Muny Medley” cupcake and how you came up with the idea.
We have had a great time partnering with the Muny this summer. When we started talking with them about partnering we brainstormed what cupcakes would be the best fit for the summer. Our head baker, Erica got to work in the kitchen and created this fantastic combination of flavors.  Tangy orange buttercream, lime and strawberry sherbet swirled cake ended up being a fantastic summer combination. We topped the cupcake off with a custom logo fondant from the Muny. The Cupcake has been a hit!
What’s the craziest cupcake you’ve created?
This is a difficult question. We are always tinkering around with different flavor combinations in our kitchen. I would have to say the Maple Bacon is the craziest… and believe me, it got rave reviews. You can check it out here: http://www.cravethecup.com/cupcakes/maple-bacon.html
What’s one fun fact most people don’t know about The Cup?
When our first store in the Central West End opened it was tiny, tiny, tiny… like 25 feet long by 15 feet wide or even smaller. As we grew, and the two retail spaces next to us became available we have expanded. We still have a pretty small kitchen for the number of cupcakes we produce.  
Why are you closed on Sundays (this was a big question with the cast of Chicago)?
All of our locations are closed on Sundays.  We feel it is important for one day a week to be set aside for our team to spend time with family, to worship and to rest. 
What is your most popular cupcake?
Confetti. Its simple and delicious, and kids love it: french vanilla cake and vanilla buttercream topped with pastel confetti sprinkles. Can’t beat it!
What do you think makes the perfect cupcake?
We love it when cupcakes have the right balance of complexity and simplicity. Our hope is to create cupcakes that are simple and approachable, yet have interesting  complexity of flavors, textures, etc…  An important ingredient is Care– we put a lot of emphasis on caring for our product, our fellow team members and our customers. We hope we can create both an exceptional product and experience. The two paired together create the perfect cupcake.
