Toffee Cookie Ice Cream Sandwich!

 

After seeing the new musical, Hands on a Hardbody, at La Jolla Playhouse, I went out to celebrate at Starlite Restaurant.  When I saw that they offered ice cream sandwiches on the dessert menu, I couldn’t wait to get this party started!  The large sandwich was cut into four more managable pieces.   There were two thick toffee cookies on the outside holding together the vanilla ice cream, rolled in chopped salted pistachios, creating a crust of nuts on each section.  Starlite served this ice cream sandwich at the perfect temperature.  The cookies were fresh and soft but hard enough to keep the ice cream inside the cookies.  The ice cream was not a cold brick that froze your lips at an attempt to bite in.  It was creamy and soft so that I could bite right through!  I usually find that the ice cream either splurts out of the sides or that it is so frozen you can’t enjoy or taste any of the flavor. I enjoyed every last morsel and especially LOVED chewing all the salted pistachios on the edges.  The toffee cookie was sweet and gooey, the ice cream super creamy, and then salty, crunchy nuts to seal the deal.  It’s going to be hard to not compare all other ice cream sandwiches to this one!
