Making “whoopie” at Billy’s Bakery

It is not a coincidence that both Beth and I get our highlights and haircuts at the chic Chris Chase Salon which is located next door to Billy’s Bakery.  What does any dessert loving girl need after sitting in foils for three hours but a cupcake, cookie, or in this case, a WHOOPIE PIE!  I couldn’t contain my excitement when I saw that Billy’s was still serving pumpkin flavored desserts in January.  Thank you Billy’s!  Pumpkin should be around all year - it’s too delicious to be hidden for the other ten months. These pies were sitting in a tower behind the glass case and the sight of them was overwhelming to this pumpkin-loving (newly highlighted) blonde!   I couldn’t wait to be walking down the street, hair blowing in the wind, making whoopie!  A couple dollars later I was out the door and holding it my hand. Then it happened…OH NO!  Why is it cold?!!  This whoopie pie has been in a refrigerated case! WHY?!!!  WHY?!!! I would have to wait a good hour or two before it would be proper eating temperature!! I could tell that if I had the will to hold off this pie would be perfect. But I didn’t have the strength!  I wanted sugar, NOW!  So there I was on ninth avenue, in the depths of despair, devouring my dessert. The thick layer of cream cheese frosting was more like the cream cheese slab you get on a morning bagel.  Had a waited it would have melted into the perfect whipped frosting I know and love.  The cake, nicely spiced, was good even chilled.  It was light and chewy, reminding me of a muffin. Next time I visit for a whoopie pie, I’ll buy a cupcake too and keep the pie for later!
