My Mom’s Pretzel Jello Recipe

Sounds like an interesting combination right? Well, this is one of my favorite homemade desserts by mom, Betsy. It’s time for everyone to know how to make my mom’s pretzel jello!  This is a midwest sweet and salty dessert that is always served at my family gatherings. Whenever I’ve made it for friends, it’s always a big hit and people can’t help but come back for more.  It’s unique and it’s got that wonderful sweet and salty combo that everyone loves.  Enjoy!

Betsy’s Pretzel Jello

Bottom/Pretzel Layer

2 2/3 cup crushed pretzels (we use the mini size ones)
3 Tbs. sugar
1 1/2 sticks unsalted butter

Combined and pat down covering a 9×13 pan.  Bake at 350 for 10-15 min.  Let cool.

Middle/Creamy Layer

8 oz. light cream cheese
1 cup sugar
1 tub Cool Whip *DO NOT use light or fat free Cool Whip

Combine cream cheese and sugar then add Cool Whip.  Cover pretzel layer (now cooled) and seal edges so you can’t see any pretzels.

Top/Jello Layer

2 cups boiling water
1 large or 2 small sugar free strawberry Jello packs
1 qt/32 oz sliced frozen strawberries set in sugar

Pour Jello and thawed strawberries in boiling water.  Let it cool just a bit then pour on top of first two layers. Put in fridge overnight to set.
