Insomnia Cookies

Insomnia Cookies became famous on college campuses by allowing students to order fresh baked cookies in the middle of the night.  It was started by two University of Pennsylvania undergrads that got sick and tired of the late night food delivery options. They started making cookies, people started calling them, they started delivering, Insomnia Cookies began!  I popped into the brand new Upper West Side store the other evening to grab a late night snack myself.  College student or not, I couldn’t resist the aroma of fresh baked cookies. Astonishing in size, the menu had a variety of cookie flavors as well as other baked goods such as brownies with toppings.   The cookies are only a dollar so I ended up ordering a few flavors to sample.  They were all pulled right from a warmed case so each cookie tasted like it was right out of the oven.  My favorite by far was the Coconut Pecan.  I love coconut in cookies, it adds texture and sweetness. The top of this cookie was perfectly browned so that biting into it there was a crispy crunch.  The inside remained really chewy and soft.  The whole pecans not only looked beautiful baked inside or sticking out of the top, but added more crunch and nutty flavor.  I would definitely order this cookie again and again!  My next favorite was the chocolate chunk.  You can’t go wrong with chunks and these chunks were huge and extremely gooey.  I broke the cookie in half and the chocolate oozed out everywhere, it was wonderful.  Again the top was crispy, but the inside was soft.  It reminded me of a homemade chocolate chip cookie, nothing fancy just plain good. The double chocolate chunk was also delicious, a less crispy top just nice and soft the whole way through. The Sugar, Snickerdoodle, and M&M came in last because they lacked flavor and were a little dry.  After starting with the Coconut Pecan, it was hard for anything else to measure up.  I kept going back for bites of it rather than the others.  It was that good!  Insomnia Cookies also bakes brownies that sound delicious.  I debated ordering the cookie dough brownie, a brownie with cookie dough baked on top, but I would have had to wait five minutes and I was too excited to bite into my cookies!  I guess I will just have to try a brownie next time.  It’s a good thing they deliver!
