While “getting lost” on my first day of walking around London, I happened upon this adorable bakery that looked so pretty from the outside it lured me in! Cupcakes in all different colors with sprinkles and sugar crystals gleamed from the window. Hummingbird Bakery is “the home of quality American baking in London.” They serve cupcakes, cake, cookies, and pies. It all looked to die for! I almost ordered my standby, red velvet, when something new caught my eye. It’s called the Rocky Road Cup. It looked to be an actual cupcake that was drenched in chocolate and left to harden. Inside, I was told, was caramel, marshmallows, and malted milk balls. SOLD! I couldn’t wait to try it. The red velvet cupcake looked at me from afar, but no worries, I know I’ll be back! Once home, I unwrapped my first London dessert with utter excitement, like a little girl on Christmas morning. To what did my wondering eyes did appear, but NOT a cupcake with cake inside, but chocolate instead, and I was filled with cheer! Basically, it was a mold of chocolate filled with marshmallows, malted milk balls, caramel, apricots, and raisins made to look like a cupcake. This was intense, dense, and very rich. I couldn’t finish it, which says A LOT! Anyway…let’s have a quick talk about raisins. Raisins…WHY ARE YOU IN DESSERTS?!!?!?!??!!!! Stick to raisin bran, cinnamon bagels, and oatmeal cookies. That’s IT! Apricots…WHY ARE YOU IN DESSERTS?!?!??!!!! Not to mention this “cupcake” was called ROCKY ROAD! When have I ever had Rocky Road ice cream, pie, ANYTHING, that has raisins and apricots?? Well, luckily for Hummingbird Bakery, the added “fruits” didn’t ruin it for me. The bites with the malt balls, marshmallow, and caramel where crunchy, gooey, and sugary sweet! I can’t wait to go back to Hummingbird and try their cakes and cupcakes. The red velvet and vanilla are still calling my name. ”Blondie…Blondie…..” xoxoBlondie
