Unbelievably “Sweet”, Sweet Mandy B’s (Lincoln Park, Chicago)

When I was a little girl, my mom would take me to the mall with her to shop. She knew that if we made a stop at the Original Cookie Company for a Sugar Butter with M&M’s, her daughter would be the happiest shopper ever! Well, my LOVE for sugar cookies has never gone away! When I walked into Sweet Mandy B’s Bakery, in Chicago, my eyes caught sight of a pink frosted, big sugar cookie, with SPRINKLES! The cookie was PERFECT, absolutely my dreams come true! A really crunchy outer edge and top that allowed a super chewy inside and center. The frosting was definitely a buttercream, but it was so light and fluffy like it had been whipped up!! It wasn’t overly sweet either, which complimented the sugar in the cookie! I can’t even describe my delight with every bite. I LOVE frosted sugar cookies, and when you add pink coloring and lots of sprinkles, I am in HEAVEN!
Sweet Mandy B’s seems like “The” bakery in Chicago. Everyone I asked in Chicago pointed me here to fulfill my sweet tooth. So when a birthday came up in our cast I made sure that the cake came from Mandy’s! We ordered a double layer Devils Food sheet cake with chocolate buttercream inbetween and vanilla buttercream frosting.
The cake was FANTASTIC! The Devils Food cake was rich, spongey, very fresh and moist! Each layer was about 2″ thick, with the generous chocolate buttercream layer in between. This cake was monstrous! My favorite part was the vanilla buttercream!!!! It was so creamy that it almost tasted like a cream cheese frosting. I literally could not stop scooping any left over frosting in the box into my mouth. It was fantastic. Chocolate cake with vanilla buttercream is to die for, in my opinion, and this was exactly that!
Last but not least, the Molasses Cookie! Every employee at Sweet Mandy B’s told me I had to get try it. I’m not a huge molasses fan, but this cookie might change everything! Talk about a Christmas Cookie! It’s like you are having the Holiday Season for dessert! The cookie was super soft, not a crunch to be found! The gingerbread spices mixed with the dark cane sugar had me singing Christmas carols out the door! The vanilla buttercream frosting was perfect because frosting always makes a cookie better! I am now a molasses believer! Thank you Sweet Mandy B’s!
